This release showcases the unique character of the majestic San Martinero agave (Agave karwinskii), which required 10 to 15 years to reach maturity.2This destilado de agave is a testament to labor-intensive, small-scale production, yielding only a tiny 100-liter batch in July 2022.3 The process employs a rare distillation method: utilizing both a clay pot for the initial distillation to impart rich minerality, followed by a refrescadera (a type of copper still with a condenser) for the second pass, which helps refine the spirit's profile.4 The result is a bold, high-proof expression that delivers intense flavor and a beautiful representation of the wild karwinskii agave.
