Rezpiral Series 9: Reina Sánchez — Pulquero & Coyote Agave Spirit

This incredibly rare co-distillation from Rezpiral Series 9 showcases the blending mastery of Maestra Mezcalera Reina Sánchez, operating in San Baltazar Chichicapam, Oaxaca. Known for her exacting precision and deep reverence for wild magueys, Reina has crafted a brilliant ensemble expression by combining two highly distinct agave varieties: Pulquero (Agave salmiana) and Coyote (Agave lyobaa).

Rather than blending separate batches after the fact, Reina roasted, crushed, fermented, and distilled these two agaves together (ensamble), allowing their characteristics to marry intimately at every stage of production. The Pulquero brings its massive, deeply green, and savory structural profile—famous for its lactic and botanical undertones. The wild Coyote, an incredibly scarce and slow-growing agave, injects a fierce, earthy complexity, rich minerals, and a dark fruit sweetness. Following traditional methods, the plants were roasted in an underground stone pit, fermented naturally with wild yeasts in open wooden vats, and double-distilled in a copper alembic still. This is a masterful expression of balance and biodiversity.

Tasting Notes

  • Nose: Intricate, layered, and deeply captivating. It opens with an intriguing blend of tangy, lactic sourdough and bright green garden herbs—parsley, celery, and fennel—before giving way to a darker core of ripe plum, damp clay, and a soft, wispy mesquite smoke.
  • Palate: Full-bodied and remarkably dynamic. The entry is subtly sweet, offering notes of cooked agave and dark berries, which quickly evolve into Pulquero's signature savory character. Mid-palate, you are treated to a complex wave of green olives, black peppercorn, and dark cacao, all bound together by a velvety texture.
  • Finish: Long, elegant, and beautifully evolving. The savory green notes fade into a sweet, lingering resonance of anise, river stones, and a clean, flinty dryness that coats the mouth beautifully.

What is the difference between Tequila & Mezcal?
