This highly singular release from Rezpiral Series 9 shines a spotlight on the exceptional talent of Maestra Mezcalera Reina Sánchez, who crafts her spirits in San Baltazar Chichicapam, Oaxaca. Reina is widely respected for her meticulous technique and her dedication to traditional, ancestral practices, bringing a bright and distinct character to every batch she distills.
For this expression, Reina works with Agave Pulquero (Agave salmiana), a massive maguey traditionally famous for producing pulque, the ancient Mexican fermented sap beverage. When distilled into a spirit, Pulquero is celebrated for its unique, deeply savory green profile. The giant plants require up to 12 to 15 years to mature, developing dense sugars and a complex structural character. Reina roasts the piñas in an underground conical stone pit, crushes them, and allows them to undergo a slow, natural fermentation with wild, ambient yeasts in open wooden vats. Following a careful double-distillation in a traditional copper alembic still, she captures an unaged spirit that bursts with unusual lactic notes and intense botanical complexity.
Tasting Notes
- Nose: Strikingly vibrant and wonderfully unconventional. It opens with an intriguing hint of sourdough starer and tangy, lactic yogurt before opening up into bright notes of green pepper, fresh pine needles, celery root, and a soft, clean woodsmoke.
- Palate: Crisp, complex, and intensely herbal. The texture is velvety, carrying bold flavors of cooked green vegetables, raw honey, and fresh mint. Mid-palate, it turns deeply savory, revealing notes of green olives in brine, black pepper, and a rich, damp-earth minerality.
- Finish: Long, crisp, and beautifully balanced. The initial savory punch mellows into a clean, enduring finish highlighted by lime zest, a touch of anise, and a lingering, stony dryness.
