Rezpiral Series 9: Alejandrina & Nicolás Hernández -Elote Agave Spirit
From the highly acclaimed Series 9 comes a deeply comforting and hyper-traditional expression from the mother-and-son distilling team of Maestra Alejandrina and Maestro Nicolás Hernández. Crafting their spirits in the historic terroir of San Baltazar Chichicapam, Oaxaca, this duo is celebrated for preserving ancestral techniques while bringing a singular, impeccable clarity to their batches.
This specific release is an Elote spirit, a brilliant showcase of a classic Oaxacan culinary and distilling tradition. To create it, Alejandrina and Nicolás first roast, crush, and ferment mature Espadín agave (Agave angustifolia). During the crucial second distillation in their traditional copper alembic still, they suspend locally harvested, roasted heirloom corn (elote) inside the still. As the spirit vapors pass through the corn, they absorb the sweet, savory, and grain-forward oils of the kernels. This process beautifully marries the crisp, smoky complexity of wild-fermented agave with the rich, comforting essence of traditional Oaxacan maize.
Tasting Notes
- Nose: Incredibly warm, inviting, and nostalgic. It opens with an unmistakable bouquet of sweet, buttered kettle corn, toasted corn husks, and warm cornbread, which beautifully balances against a crisp backdrop of roasted agave, fresh mint, and light mesquite smoke.
- Palate: Rich, round, and beautifully textured. The mouthfeel is creamy and coating, delivering an immediate wave of sweet corn silk, roasted nuts, and honeyed agave. Mid-palate, it turns delightfully savory, revealing subtle notes of white pepper, grilled zucchini, and a soft, clay-like earthiness.
- Finish: Long, smooth, and incredibly comforting. The vegetable brightness gently fades, leaving a sweet, lingering resonance of toasted grain, warm baking spices, and a clean, velvety finish that mimics a fresh cup of atole. The

What is the difference between Tequila & Mezcal?
Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.
Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.
One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.
Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.
In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
