A Family Masterpiece: Mother & Son Craftsmanship

This rare ensemble is a profound expression of heritage, crafted by the mother-and-son team Alejandrina and Nicolas Hernandez. In the world of traditional spirits, this bottle stands out not only for its liquid quality but for its story, highlighting the essential, often overlooked role of women in the palenque.

By co-distilling four distinct agave varieties, Jabali, Mexicano, Espadin, and Cuishe, the Hernandez family captures the entire biodiversity of the Chichicapam landscape in a single 750ml bottle.

At 44.9% ABV, this spirit prioritizes elegance and nuance, allowing the delicate interplay of the four agaves to shine without being overshadowed by high heat.

Tasting Notes

  • Aroma: A delicate and inviting bouquet. The Cuishe lends a punch of wild green herbs and cedar, while the Jabali provides a light, frothy tropicality, think starfruit and green mango, underpinned by the reliable, honeyed sweetness of Espadin.
  • Palate: Soft and incredibly approachable. The lower ABV (44.9%) highlights a silky mouthfeel. You’ll find a sophisticated balance of savory and sweet: roasted sweet potato, wet river stones, and a touch of the Mexicano’s signature earthy, dark-chocolate depth.
  • Finish: Clean, crisp, and mineral-driven. The finish is remarkably smooth, leaving a gentle trace of white pepper, lime pith, and a cooling, botanical freshness that invites another sip.

For our Agave community, this ensemble is the "Goldilocks" of our agave shelf: complex enough for the connoisseur but accessible enough for someone just beginning to explore wild agaves. The 44.9% ABV makes it an exceptionally versatile spirit, perfect for sipping slowly.

"Alejandrina and Nicolas have achieved a rare feat here: a four-agave blend that feels perfectly focused. It is a harmonious, low-proof masterclass in Oaxacan blending."

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.

Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.

One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.

Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.

In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
