This is a rare and highly sought-after batch, crafted from wild Maguey Tobalá ( Agave seemanniana) harvested after approximately 12 years of maturation in the South Sierra region of Oaxaca. What makes this mezcal particularly special is the use of "capón" agave.

A maguey is deemed "capón" when its reproductive stalk, or quiote, emerges but is cut before fully developing, typically reaching no more than one meter. This "castration" redirects the plant's energy, resulting in a more concentrated and flavorful agave, traditionally considered the highest quality for mezcal production. The opportunity to create an entire batch solely from capón agave is increasingly scarce, making this offering truly unique.

This exquisite mezcal follows the time-honored Real Minero production methods: the agave hearts are roasted in a conical earthen oven, crushed using an electric mill, and fermented naturally in open-air sabino wood vats with wild yeasts and well water. The spirit is then double-distilled in traditional Filipino-style clay pot stills under the watchful eye of Maestro Edgar Ángeles Carreño. This specific batch, totaling only 201 liters and bottled in February 2022, was rested in glass for one month before bottling at a potent 53.7% ABV.
