Production Notes:

  • Produced in Santa Catarina Minas, Oaxaca
  • Cooked in an earthen pit oven for a rich, smoky flavor Hand milled using a maleta and canoa for a traditional touch
  • Fermented in pine tanks for added depth and complexity
  • Distilled twice in a Filipino-style clay still for a unique character
  • Rested in glass for 8 months before bottling to refine the flavors
