Maguey Sacatoro (Agave angustifolia rubescens) is a regional relative of the Espadín, but it possesses a distinct genetic profile and a personality all its own. Tasting Profile

Sacatoro is often celebrated for its "green" and mineral qualities, providing a leaner, more focused profile than the more tropical Papalote.

  • Aroma: Fresh and herbaceous. The nose opens with notes of snapped green beans, lemongrass, and eucalyptus. A gentle, cooling minerality, similar to wet slate, is underscored by a faint, nutty sweetness.
  • Palate: Crisp and assertive. The initial flavors of bright citrus and green apple evolve into a savory mid-palate of roasted nuts, dried herbs, and a touch of black pepper. The mouthfeel is lean but incredibly smooth.
