Rayo Seco Criollo (Miguel Cevero)

The Rayo Seco Criollo represents a bridge between the storied traditions of Guerrero and the unique terroir of Zumpahuacán, Estado de México. While Rayo Seco is a pioneer in bringing the spirits of Guerrero to the global stage, this expression showcases their commitment to featuring masterful producers from neighboring regions.

This 100% Maguey Criollo (Agave angustifolia) is the work of Maestro Miguel Cevero, whose family has maintained the ancestral methods of Estado de México for generations. Produced in extremely small batches, this spirit is a masterclass in patience and manual labor, from the hand-mashing of the agave to the rare use of a cascomite (wooden) trunk in the distillation process.

Tasting Profile

The use of the wooden trunk during distillation, combined with the small, sugar-dense Criollo agave, results in a profile that is exceptionally bright yet grounded by deep, rustic undertones.

  • Aroma: A vibrant and complex opening featuring notes of crisp green apple, lemongrass, and a soft floral sweetness. Beneath the fruit lies a hint of damp forest floor and subtle woodsmoke.
  • Palate: Remarkably clean and structured. The palate is treated to flavors of sweet roasted agave, citrus zest, and a distinct herbal character reminiscent of fresh mint and sage. The cascomite trunk imparts a delicate, earthy roundness that softens the 45%+ ABV.
  • Finish: Long and mineral-driven. It concludes with a refreshing herbal snap and a lingering, stony dryness that invites another sip.

What is the difference between Tequila & Mezcal?
