The Rayo Seco Cachetón is a rare and compelling expression from the arid landscapes of Coatepec, Puebla. While Rayo Seco is widely celebrated for its pioneering work in Guerrero, this release highlights the brand's expansion into other unique Mexican terroirs. Produced by Maestro Artemio Correa, this spirit utilizes the rare Maguey Cachetón (Agave oteroi), a varietal grown near a protected cactus biosphere and a prehistoric lake bed.

Maguey Cachetón is a high-altitude agave (harvested at approximately 5,505 feet) and is considered a cousin to the notorious Jabali. It is notoriously difficult to work with due to its high saponin content, which produces massive foam during fermentation and distillation. The result of this labor-intensive process is a spirit of immense complexity and surprising sweetness.

Tasting Profile

The unique terroir of the Puebla lake bed, littered with fossils and minerals, imparts a distinctive character that is both tropical and refined.

  • Aroma: An incredibly vibrant bouquet that leads with fruity notes of watermelon and papaya. There is a clean, floral undertone reminiscent of rose water and lavender, balanced by a hint of herbal mint.
  • Palate: Round and tropical. The palate is treated to lush flavors of cucumber, ripe pear, and a creamy note of banana. The mouthfeel is phenolic and structured, showcasing the high quality of the A. oteroi variety.
  • Finish: Smooth and clean with a low smoke profile. It leaves a lingering trail of pink peppercorn, mild baking spices, and a touch of underripe cherry.
