Raíz Oaxaca Mezcal Artesanal Tobalá

Raíz Oaxaca Tobalá is a rare and distinguished expression of the "King of Agaves." Crafted from wild Tobalá (Agave potatorum) harvested in the rocky, high-altitude terrain of San Dionisio Ocotepec, this mezcal represents the pinnacle of artisanal patience.

Because Tobalá is a small, broad-leafed agave that does not produce offsets (hijuelos), each plant must be grown from seed and matured for 12 to 15 years before it is ready for harvest. The result is a sophisticated, terroir-driven spirit that balances the wild, botanical intensity of the highlands with the smooth, elegant craftsmanship of a 4th-generation distilling family.

Tasting Notes

  • Aroma: A delicate and inviting nose characterized by sweet floral notes—think wild jasmine and gardenia, intermingled with the scent of dried tropical fruits like mango and papaya.
  • Palate: The texture is remarkably silky, with a medium body. It reveals a complex layering of flavors: initial notes of honey and cooked agave give way to an earthy, mineral core with subtle hints of tobacco and cocoa.
  • Finish: A refined and clean finish. It leaves a lingering sweetness on the palate with a very gentle, sophisticated wisp of wood smoke and a touch of almond.

Production Details

Serving Suggestions

Tobalá is widely considered a "sipping mezcal" and is best enjoyed neat at room temperature. Use a wide-rimmed copita to allow the floral aromatics to open up. This expression pairs exceptionally well with light appetizers, fresh goat cheese, or a piece of high-quality dark chocolate.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.

Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.

One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.

Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.

In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
