Raíz Oaxaca Espadín & Tobalá is an exquisite "Ensamble", a traditional practice in which two distinct agave varieties are roasted, fermented, and distilled together in a single batch. This expression harmonizes the robust, reliable character of cultivated Espadín (Agave angustifolia) with the wild, complex elegance of Tobalá (Agave potatorum).
By co-distilling these agaves in copper pot stills in San Dionisio Ocotepec, the master mezcalero creates a spirit that is greater than the sum of its parts, offering a sophisticated profile that appeals to both seasoned aficionados and those new to wild agave spirits.
Tasting Notes
- Aroma: An intriguing bouquet that opens with the floral and tropical fruit notes characteristic of wild Tobalá, think dried hibiscus and ripe mango, balanced by the savory, earthy scent of roasted Espadín.
- Palate: The entry is soft and buttery. Layers of sweet cooked agave and honey are punctuated by a bright, botanical complexity. You may detect hints of wet stone (minerality) and a delicate herbal snap reminiscent of fresh lemongrass.
- Finish: Smooth and persistent. The finish leans into a refined, elegant smoke that doesn't overpower, leaving behind a trace of cocoa and a light peppery tingle.
