Puntagave Rustico Sotol 750ML - produced from a wild-harvested desert spoon in the Chihuahuan Desert of Northern Mexico. It is produced in a state-of-the-art production facility and fermented with champagne yeast.

The unique characteristic of PUNTAGAVE RUSTICO is that it delivers "complexity of character" rather than the "consistency of characters" possessed by PUNTAGAVE ARTISANAL.

Every controlled denomination of PUNTAGAVE RUSTICO is a unique product of a specific origin, micro-climate, time, and production method. Therefore, it's truly special, "It shifts, it moves, it's a profound and unique experience. when tasted side by side, "priceless."

SOTOL Distilleries are called Vinatas. While tequila is known worldwide, Sotol is a connoisseur delight and one of Mexico's best-kept secrets. It is an extraordinarily pure spirit with its denomination of origin, highly valued for its rich flavors.

It is an organic agave, wild-harvested in the Chihuahuan Desert of Northern Mexico, which takes 15 years to mature. Only the strongest and healthiest plants survive this natural selection process in the desert's harsh climate. Maturing on the mountainsides, the plant stores vast amounts of natural energy before it is ready to be harvested. No herbicides, no insecticides, no fertilizers.

Each bottle contains the distilled nectar of an estimated 15-year-old plant, providing the richest agave scent and flavor in a Sotol.

The piñas of the Sotol are placed in a volcanic rock-lined pit where they roast for 3-4 days. They are then hand-crushed and open-air fermented for 4-8 days. Distillation occurs in a pot still fueled by fire for the first distillation and gas for the second. It is distilled to 60-80% ABV and brought down to proof. It rests for 60 days before bottling unfiltered.

Tasting Notes

  • Nose: Herbaceous, hay, dried sotol core, light smoke, lime, and fresh pine scents. Moderately intricate, with average length and unremarkable profile. Astringent, adequately smooth alcohol with medium body.
  • Taste: Sour, buttery-smooth taste. Pecan shell, pine nut, roasted almond, cooked artichoke, light honey, and floral perfume flavors. Intense, moderately complex, and well-balanced flavor.
  • Finish: Pleasant, straightforward, and has a very long finish.

However, due to the challenges of maintaining consistent temperature during shipping, we exclusively offer in-store pickup for our craft beers.
