An Ancestral Celebration of the Birthplace of Corn

While Oaxaca is world-renowned for Mezcal, Prieto y Prieta is leading a new movement: Mexican Corn Whisky. This spirit honors the 6,000-year history of corn in the Oaxacan valleys. Unlike mass-produced grain spirits, this whisky is a "landrace" expression, using the genetic diversity of the region to create a profile that is impossible to replicate elsewhere.

Produced by Maestro Destilador Oscar Manuel under the guidance of the Koch Group, this whisky is crafted from 100% heirloom corn (Criollo) in four distinct varieties: White, Red, Purple, and Yellow. Each brings a unique sugar profile and starch density to the final blend. 

The Craft:

Distilled Like a Mezcal, Aged Like a Cognac

The production of Prieto y Prieta blends traditional Mexican techniques with European aging expertise:

  • The Mash: The four corn varieties are milled with a mechanical hammer mill and open-air fermented using well water and vinasse (the liquid leftovers from previous distillations), a technique borrowed from traditional mezcal production to add depth. 
  • The Distillation: Twice distilled in a hybrid pot and column still made of copper and stainless steel.
  • The Maturation: Aged for 3 years in a sophisticated "triple wood" regimen: New French Oak, ex-Bourbon barrels, and used Mexican Sherry-style wine casks. 

Tasting Notes

  • Color: Bright amber with glints of yellow gold.
  • Aroma: A complex opening of red apple and honey, followed by toasted hazelnut, vanilla, and a hint of dried peach. There is an underlying scent of caramelized wood and a touch of tiramisu.
  • Palate: Remarkable creamy texture. It features flavors of Neapolitan custard, roasted corn, and warm cinnamon. Unlike many corn whiskies, it isn't cloying; it’s balanced by a light, pleasant acidity.

However, due to the challenges of maintaining consistent temperature during shipping, we exclusively offer in-store pickup for our craft beers.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.

Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.

Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.
