Paranubes Café de Olla Licor is a liquid tribute to the ancestral Oaxacan tradition of café de olla—coffee brewed in clay pots with unrefined sugar and spices. Far from a standard coffee liqueur, this spirit begins with the distillery’s acclaimed Paranubes Rum (Aguardiente de Caña), a high-proof, wild-fermented cane juice rum produced in the cloud forests of the Sierra Mazateca.
To create the liqueur, Master Distiller José Luis Carrera blends this grassy, agricultural rum with a cold-brew extract of locally grown Oaxacan coffee. It is then infused with a complex botanical bill including Ceylon cinnamon, wild Oaxacan vanilla, avocado leaf, and rosita de cacao. In a final step unique to this production, the liqueur is rested in red Oaxacan clay vessels, imparting the authentic "earthy" finish that defines a true café de olla.
Tasting Notes

- Primary: Intense, freshly roasted coffee bean and warm piloncillo (unrefined brown sugar).
- Secondary: Distinct notes of cinnamon bark and dark chocolate.
- Tertiary: Underlying hints of fresh green sugar cane and a subtle savory herbal quality (avocado leaf) that cuts through the sweetness.
- Palate: Texture: Velvety and rich, but surprisingly balanced—avoiding the cloying syrupiness of mass-market coffee liqueurs.
- Flavor: A bold collision of dark roast coffee and the grassy, vegetal funk of the base rum. Mid-palate waves of baking spice, toasted cacao, and vanilla bean emerge, supported by the emulsifying depth of sarsaparilla.
- Finish: Long and warming. The sweetness fades to reveal a sophisticated lingering spice, a touch of minerality from the clay resting, and a final whisper of dry espresso.
Serving Suggestions
- Neat: Serve at room temperature or slightly chilled to appreciate the evolution of spices.
- Carajillo Oaxaqueño: Shake vigorously with espresso and ice for a frothy, complex take on the classic Carajillo.
