Palomo Te Conquista Abocado Con Mole Mezcal
The Culinary Spirit: Distilled with Grandma's Oaxacan Mole Recipe
Experience a profound fusion of Oaxacan tradition with Palomo Te Conquista Abocado Con Mole, a truly unique Destilado Con (distilled with) expression. Maestro Mezcalero Carlos Mendez Blas, in Santiago Matatlán, takes his superb Espadín base and elevates it with the legendary, complex flavors of his grandmother's 30-ingredient Mole recipe.
This mezcal goes beyond simple infusion. After the Espadín is double-distilled, it undergoes a four-week maceration with the rich components of Oaxacan mole, chiles, nuts, spices, and chocolate, before an unprecedented third distillation. This results in a clear spirit (joven) that has perfectly captured the savory, sweet, and spicy complexity of the sauce, offering a depth of flavor unlike any other mezcal. It’s an adventure for the palate and a tribute to Oaxaca's culinary heritage.
Tasting Notes
This mole-infused mezcal is a savory journey, delivering a remarkable balance between the traditional smoke/agave and rich, complex spice.
- Aroma: Rich, warm, and inviting. Immediate notes of dark chocolate and cinnamon lead, underscored by savory hints of pasilla chili, cured tobacco, and a delicate layer of wood smoke.
- Palate: Full-bodied, intense, and deeply complex. The palate delivers rich flavors of homemade mole, featuring dark cocoa, nutty undertones (peanuts, almonds), and a complex blend of warm spices (clove, star anise). The agave base shines through with sweet caramel notes, while the chili imparts a pleasant, lingering savory spice.
- Mouthfeel: Velvety and coating, providing a luxurious texture that is surprising for an unaged spirit.
- Finish: Long, evolving, and exceptionally smooth. The finish leaves behind a powerful memory of sweet spice, earthy chili heat, and a final, clean touch of smoky agave.

What is the difference between Tequila & Mezcal?
Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.
Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.
One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.
Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.
In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
