Palomo Te Conquista Abocado Con Cacao Mezcal
A Chocolate Dream: The Marriage of Mezcal and Oaxacan Cacao
Indulge in the decadent complexity of Palomo Te Conquista Abocado Con Cacao, an extraordinary Destilado Con expression crafted by fourth-generation Maestro Mezcalero Carlos Mendez Blas in Santiago Matatlán, Oaxaca. This mezcal perfectly unites the smoky spirit of the agave with the rich, earthy depth of authentic Oaxacan chocolate.
This unique process begins with a base of traditionally made Espadín mezcal, which is double-distilled. The mezcal then undergoes a four-week maceration with Carlos’ Grandmother’s homemade Oaxacan chocolate before a third and final distillation is performed. The result is a clear spirit that expertly captures the essence of the cacao, balancing its inherent sweetness and slight bitterness with the smoky, caramel flavors of the cooked agave. It's an innovative spirit ideal for sipping or crafting exceptional chocolate-forward cocktails.
Tasting Notes
This mezcal offers a rich, smooth, and full-bodied experience, dominated by the harmonious fusion of roasted agave and dark cacao.
- Aroma: Captivating and rich. Opens with distinct notes of dark chocolate and roasted cocoa beans, complemented by the underlying sweetness of cooked agave and a hint of floral and earthy undertones.
- Palate: Smooth, full-bodied, and wonderfully balanced. The signature smokiness of Espadín is beautifully counteracted by the sweet, slightly bitter profile of dark cacao. Flavor notes include vanilla bean, sweet caramel, dried fruits (figs, raisins), and a touch of spice, creating an indulgent and complex experience.
- Mouthfeel: Velvety, rich, and full-bodied, with a pleasing texture that coats the palate.
- Finish: Long and smooth, leaving a luxurious trail of lingering cocoa, sweet agave, and a gentle, clean spice.

What is the difference between Tequila & Mezcal?
Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.
Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.
One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.
Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.
In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
