Journey to the “Mezcal Capital of the World,” Santiago Matatlán, Oaxaca, for this vibrant expression of Espadín. Palomo Mezcal Espadín Joven is crafted by esteemed fourth-generation Mezcalero Carlos Mendez Blas, representing the pure, unaged essence of Agave angustifolia.
The Espadín agave, matured for approximately nine years, is prepared using time-honored techniques: traditionally cooked in an underground pit oven, milled by a horse-drawn tahona, and double-distilled in a copper still. Carlos Mendez Blas intentionally uses a blend of pine and oak during cooking to achieve a signature, lighter smoke profile that allows the agave's intrinsic flavor to shine. The result is a highly versatile and flavor-forward mezcal that is delicious sipped neat and assertive enough to elevate any cocktail.
