Unique Agave Story:
While Chino and Alto are native to Michoacán, the Mexicano agave has an intriguing history. Don Miguel collected Agave rhodacantha seeds from Oaxaca decades ago, cultivating a sustainable supply on their Michoacán land, adding a distinctive touch to this blend.

- Cooking: Traditional underground pit oven
- Milling: Ingenious mechanical shredder made from a 1978 Dotson car engine
- Fermentation: Open-air wild yeast in oak-lined earthen pits
