Palomas Mensajeras Azul: The Purest Expression of Origin

Palomas Mensajeras Azul represents the cornerstone of the brand’s collection. Crafted from 100% Blue Weber agave (Agave tequilana), this expression is a masterclass in clarity and regional character. Harvested at peak maturity from the red, mineral-rich soils of the highlands, the piñas are slow-cooked in traditional masonry ovens to unlock their deep, honeyed complexity.

The Craft

This spirit is produced with a reverence for transparency. Following a natural fermentation process, it undergoes double distillation in small copper pot stills. The result is a vibrant, unaged profile that carries the message of the earth directly to the glass, free from the influence of wood or additives.

Tasting Notes

  • Appearance: Crystal clear with exceptional brilliance and a heavy body that creates long, slow-moving tears on the glass.
  • Aroma: An immediate greeting of cooked agave and bright citrus zest. Subtle undertones of wet stone and fresh rain emerge, followed by a delicate floral top note reminiscent of jasmine.
  • Palate: The entry is silky and full-bodied. Initial flavors of sweet roasted agave and pink grapefruit are balanced by a sophisticated peppery spice. Mid-palate, a distinct minerality provides a crisp, structural backbone.
  • Finish: Clean and enduring. It leaves a lingering impression of sweet herbs and a soft, earthy warmth that invites another sip.

Serving Suggestion

Palomas Mensajeras Azul is best enjoyed neat in a wide-rimmed glass, allowing the floral aromatics to bloom. It also serves as an elegant foundation for a refined cocktail, such as a classic Paloma with fresh-squeezed grapefruit and a pinch of volcanic salt.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.

Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.

One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.

Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.

In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
