Ignite your senses and prepare for a truly culinary-inspired agave spirit experience with Pal'alma Destilado de Agave Santa Puebla. Crafted by the visionary Maestro Mezcalero Asunción Matilda Vargas in Tepeojuma, Puebla, this extraordinary spirit is a liquid ode to vibrant Mexican flavors, designed to tantalize the palate and make mouths water.

This unique destilado is made from 100% Espadilla agave (Agave angustifolia), which has been capón (castrated) for one year before harvest to concentrate its natural sugars. The agave piñas are then traditionally cooked in a pit oven made of earth and stone, imparting deep, earthy notes. Following this, they are meticulously milled by hand using an axe and fermented in a shallow stone well. The distillation process is truly exceptional: it undergoes a double distillation using a hybrid Filipino-style pot still of clay and wood with an external copper condenser (refrescadera)—a truly "wild still." The magic culminates during the second distillation, where hoja santa leaves, wild cilantro, and a blanched whole chicken are added, infusing the spirit with their distinctive and savory essence. After distillation, the 'Santa' is rested for over one year before bottling, allowing its complex and mouth-watering flavors to integrate beautifully. Bottled at 55% ABV (may vary by batch), this Destilado de Agave is a fresh, vibrant, and utterly unique offering that some have even likened to an aperitif.

  • Aroma: The initial nose is remarkably evocative, immediately evoking the fresh and aromatic qualities of a vibrant green salsa. Prominent notes of fresh, bright cilantro intermingle with the distinctive, almost anise-like and herbaceous scent of hoja santa, which carries a hint of a unique, earthy warmth. Underlying these, a subtle, savory whisper of roasted chicken provides an intriguing depth, perfectly integrated with the sweet and smoky aroma of cooked agave.
  • Palate: On the palate, the 'Santa' offers an incredibly oily and velvety texture, coating the mouth with richness. The fresh, zesty notes of wild cilantro dance playfully with the unique fennel-reminiscent warmth and subtle earthiness of hoja santa. This verdant complexity is beautifully complemented by a delicate, savory richness that hints at succulent chicken broth, adding an unexpected depth of umami. What is the difference between Tequila & Mezcal?
