Crafted by the visionary Maestro Mezcalero Jorge Torres in the cold mountains of Santiago, Nuevo León, this spirit pushes the boundaries of traditional Destilado de Agave, offering a unique profile born from its distinctive fermentation process.

This exceptional destilado is made from 100% De Castilla (Agave americana), a testament to the local terroir. The agave piñas are slow-cooked in a traditional conical earthen oven, imparting deep, smoky notes. Following this, they are meticulously milled by hand using a wooden mallet and a stone pit. The true innovation lies in the fermentation: due to the colder climate, Jorge Torres uses an extraordinary blend of 60% pulque (the milky white "wine" made from agave sap) and 40% agave fiber, instead of water. This unique approach contributes significantly to its idiosyncratic character. The spirit is then distilled twice using copper pot stills. The result is a Destilado de Agave that is "soft and rich, velvety and peppery, with notes of maiz and just a hint of lactose." Bottled at 50% ABV (may vary by batch), this is a must-try for those seeking a truly distinct and thought-provoking agave spirit.
