Experience a truly unique and deeply personal expression with Pal'alma Destilado de Agave 'Higo - Puebla.' This exceptional spirit is a testament to the innovative spirit of Maestro Mezcalero Asunción Matilda Vargas and Erick Rodriguez of Pal'alma, born from a captivating encounter with fig leaf-infused water. Crafted in Tepeojuma, Puebla, this spirit defies convention, offering a sensory journey unlike any other.
Made from 100% Espadilla agave (Agave angustifolia) that has been capón (castrated) for a year to concentrate its sugars, the piñas are slow-cooked in a traditional earthen and stone pit oven. The agave is then meticulously milled by hand with an axe before undergoing fermentation in a shallow stone well. The distillation process is where this spirit truly sets itself apart: it's twice distilled using a hybrid Filipino-style pot still of clay and wood with a unique copper refrescadera (external condenser). During the second distillation, fresh fig leaves and halved fresh figs are added, infusing the spirit with their distinctive character. After distillation, this remarkable Destilado de Agave was rested in glass for nearly six years before bottling, allowing its complex flavors to harmonize and deepen. Bottled at 55% ABV (may vary by batch), this is a rare and profound spirit for the discerning palate.

The extended resting period in glass lends a remarkable smoothness and depth, allowing the fig notes to truly shine without overwhelming the agave.
