Pal’alma – Estado de México offers a captivating and rare taste of the eponymous State of Mexico, a region whose agave spirits have been notably absent from the US market until now. Curated by the intrepid Erick Rodriguez of Almamezcalera, this exceptional distillate hails from the biodiverse Malinalco region, where Maestro Marcelino Pérez expertly crafts this expression from Papalomé agave (Agave potatorum), a varietal known as Tobalá in Oaxaca.

In this humid and generous landscape, where tropical, pine deciduous, and gallery forests thrive, Marcelino employs time-honored methods: the agave hearts are roasted in a traditional earthen conical oven, crushed using a stone pedestal and wooden mallet, and fermented naturally with wild yeasts in encino (oak) wood vats using local river water. The spirit is twice-distilled in a copper pot still with a wooden cap, with careful cuts made using heads and tails to achieve a balanced and characterful 50% ABV.

Pal’alma – Estado de México is an eye-opening testament to the hidden treasures and rustic ingenuity found within this densely populated yet surprisingly wild region, offering a unique and thrilling experience for discerning agave enthusiasts.
