Crafted by the innovative Maestro Mezcalero Asunción Matilda Vargas in Tepeojuma, Puebla, this extraordinary spirit explores the captivating synergy between Espadilla agave and the unexpected addition of avocado. This unique destilado is made from 100% Espadilla agave (Agave angustifolia), harvested one year after being capón (castrated) to concentrate its rich sugars. The piñas are then traditionally cooked in a pit oven made of earth and stone, imparting deep, smoky notes. Following this, they are meticulously milled by hand using an axe and fermented in a shallow stone well. The distillation process is a highlight, utilizing a hybrid Filipino-style pot still of clay and wood with an external copper condenser (refrescadera). The true magic happens during the second distillation, where both fresh avocado fruit and avocado leaves are added, infusing the spirit with their distinctive character. After distillation, the 'Aquacate' is rested for over two years before bottling, allowing its complex and intriguing flavors to integrate beautifully.
