Pal 'Alma Durango Ensamble Destilado de Agave

Curator: Erick Rodriguez (Almamezcalera / Pal 'Alma)

Category: Destilado de Agave

Region: Durango, Mexico

Journeying to the dramatic, high-altitude desert plateaus and rugged canyons of Durango, this release from Pal 'Alma showcases the art of the traditional ensamble. By co-fermenting and distilling multiple wild and semi-wild agave varieties harvested from the same dramatic terroir, maestro mezcaleros achieve a harmonious complexity impossible with single-varietal bottlings. Curated with a deep respect for Durango's distinct northern distilling heritage, this expression captures the untamed spirit of the Sierra Madre Occidental.

Tasting Notes

  • Aroma: A captivating and multifaceted nose featuring baked agave, rich mesquite smoke, and dried dark fruits like fig and raisin. As the spirit opens up, vibrant herbal top notes of wild mint, eucalyptus, and sun-baked earth emerge from the glass.
  • Palate: Full-bodied, rich, and velvety on the entry. An initial wave of sweet roasted agave and caramel gives way to savory mid-palate notes of cracked black pepper, roasted root vegetables, and a distinct, mineral-driven salinity.
  • Finish: Long, warming, and profoundly dry. The finish leaves behind lingering echoes of campfire smoke, herbal spice, and a refreshing citrus zip that ties the complex blend together.

Production Highlights

  • Agave Blend: An expertly balanced assembly of wild and semi-wild agave varieties native to Durango (such as Cenizo and regional variants).
  • Craftsmanship: Hand-harvested, traditionally roasted in subterranean pit ovens, and crafted using small-batch artisanal methods.
  • Batch Details: Limited micro-batch release celebrating the rich botanical diversity and unique distilling traditions of Durango.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.

Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.

One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.

Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.

In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
