Origen Raíz Puma
A collaboration born of shared passion, Origen Raíz Puma is a rare and exceptional mezcal crafted by the Saravia family of Durango and the acclaimed Cortés family of Oaxaca. This spirit is a true expression of the high-desert landscape, distilled from wild Agave asperrima—known locally as "Puma." These agaves grow wild in the biodiverse grasslands of the Saravia's ranch, Rancho El Rocillo. Here, a unique natural process occurs: grazing cattle and deer naturally "capado" the plants by eating their flowering stalks. This ancient, organic method, essentially castrates the agave, ensuring all its sugars are concentrated in the piña, resulting in a spirit of unparalleled richness.
Following a time-honored tradition, the harvested agaves are roasted in a rock-lined earthen pit with native huizache and encino wood. The cooked agave is then meticulously crushed by a stone tahona and naturally fermented in pine vats with ambient yeasts. The mash is double-distilled in a copper alembic and proofed with the heads and tails of the run to a robust 50% ABV.

- Aroma: A captivating and complex bouquet of roasted agave, wet earth, and delicate smoke, with underlying notes of wild herbs and a hint of sweet caramel. The aroma is rustic and honest, with a subtle minerality that speaks to its high-desert origins.
- Palate: The initial sip is a revelation, with a full-bodied texture that carries a beautiful balance of savory and sweet. The distinct flavor of cooked agave shines through, accompanied by earthy, fungal notes and a gentle smokiness that is more integrated than overpowering. Mid-palate, you'll discover nuances of white pepper, green bell pepper, and a touch of tropical fruit, like grilled pineapple, culminating in a clean, elegant finish.
- Finish: Long and remarkably smooth, the finish leaves a lingering warmth on the palate with a pleasant echo of sweet spice, a hint of black licorice, and a satisfyingly dry, mineral-driven conclusion. The 50% ABV gives it a powerful but not aggressive presence, carrying the flavors beautifully to the end.
