Olmeca Altos Blanco
Olmeca Altos Blanco (also known as Altos Plata) is the purest expression of the Altos estate. As a 100% Blue Weber Agave spirit, it serves as the foundation for the entire range, capturing the vibrant, herbaceous, and citrus-forward character of the Jalisco Highlands.
Designed by bartenders for bartenders, this Blanco is celebrated for its high "mixability." It possesses a robust agave backbone that doesn't disappear when mixed with lime and agave nectar, making it a perennial favorite for the world's best Margaritas.
The Craftsmanship
The secret to the Blanco's complex mouthfeel is the Tahona process. After the agave piñas are slow-cooked in traditional brick ovens, they are crushed using a two-ton volcanic stone wheel. This traditional method extracts the juice along with the essential oils and fibers, which are then fermented and distilled together. This "Tahona liquid" provides a sweet, bready, and intensely agave-focused profile that modern roller-mill processes simply cannot replicate.
Tasting Notes
- Appearance: Crystal clear with brilliant silvery sparks and a medium body that clings elegantly to the glass.
- Aroma: Very fresh and herbal. It opens with the scent of steamed agave and a distinct "green" quality, think fresh-cut grass and bell pepper. These notes are followed by bright bursts of lime zest and a hint of wet stone (minerality).
- Palate: A sweet, smooth entry that quickly develops into a complex mid-palate. You will taste cooked agave, white pepper, and a fruity sweetness reminiscent of cooked citrus and green apple. The Tahona influence adds a subtle "toasty" or earthy undertone.
- Finish: Clean, crisp, and surprisingly long for an unaged spirit. It leaves a pleasant, lingering tingle of black pepper and a final floral note.
Serving Recommendation
While it is smooth enough to be enjoyed as a chilled shot with a sangrita chaser, Olmeca Altos Blanco is the ultimate choice for a Classic Margarita or a Tommy’s Margarita. Its high-altitude acidity and herbal punch also make it a perfect companion for a refreshing Paloma topped with fresh grapefruit juice and soda.
