- Vineyards: Grapes sourced from a 15-year-old parcel planted on silty clay-loam soils at a high elevation of 2000 meters.
- Winemaking: Grapes were destemmed, foot-trodden, and fermented and macerated on the skins for 1 to 4 weeks in clay amphoras. The wine was then racked off the skins and rested on its lees in the same amphorae for 6 months before being bottled, unfined and unfiltered, using a ladle and funnel. All Octagono wines are natural, fermented with whole grape clusters on ambient yeast, with skin contact, and with absolutely no SO2 added at any point.
