A truly rare and historical bottling, this Neta Madrecuixe Capón represents the masterful handiwork of Maestro Ranulfo García Pacheco from a production run dating back to May 2014. Distilled from Madrecuixe Capón agave (karwinskii) grown on the family's rocky red-and-white soils in El Saúz, Miahuatlán, this spirit is a living testament to a unique, time-honored tradition.

This batch was held in reserve, a "family savings," and released only now, offering a pristine glimpse into the Maestro's legacy before he transitioned to a supervisory role in 2019. Distilled once in a copper pot still utilizing the increasingly rare refrescadera technique, it achieves a remarkably clean spirit brimming with robust flavor at a potent 48.7% ABV. The process, which involves condensing vapors back into the pot for reheating before final collection, yields an intense yet pristine expression of the Miahuatlán terroir.

Tasting Notes: Madrecuixe Capón (May 2014)

  • Aroma: Immediately bright and mineral-driven. Distinct notes of wet terracotta, rock salt, and crushed oyster shell are layered over sweet, earthy tones of cooked pumpkin and sweet potato. A clean, high-toned floral spice reminiscent of white pepper and chamomile emerges on the finish.
  • Flavor: The palate is complex, structured, and long. It opens with a vibrant citrus peel—lime and bitter orange—and quickly transitions to a dense core of green bell pepper, fresh spearmint, and anise. The unique capón (cut stalk) agave imparts a depth of savory, dry-wood smoke and nutty earth.
  • Mouthfeel: Full-bodied and oily with a commanding texture that beautifully manages the high proof. The heat is present but perfectly integrated, delivering a warm, lingering minerality and a sharp, clean lift that avoids any harshness.
  • Finish: Long, evolving, and exceptionally clean. Leaves behind a signature mix of petrichor (earth after rain), mesa-side dust, and a lingering, sweet cacao nib bitterness.
