NETA Ensemble: Madrecuixe, Bicuixe & Espadín

Step into the "modern classic" of Miahuatlán with this phenomenal field blend from Maestro Manuel Aquino García. This ensemble is more than just a spirit; it is a liquid map of the landscape surrounding Logoche. By roasting and fermenting wild Bicuixe, semi-wild Madrecuixe, and cultivated Espadín together in a single batch, Manuel and his wife, Nacha, honor a long-standing tradition of "field blends" that reflect the natural biodiversity of their land.

Distilled with a mix of guía (mature) and quiotudo (capón) agaves, this Summer 2022 release is a limited run of just 222 bottles, offering a rare glimpse into the ancestral land management and communal craftsmanship of the Aquino family.

Tasting Notes

  • Aroma: The nose is incredibly vibrant and herbaceous, driven by the high concentration of wild Karwinskii (Madrecuixe and Bicuixe). Aromas of fresh-cut cedar, rosemary, and sage intertwine with a soft, fruity sweetness from the Espadín. Beneath the greenery lies a deep, stony minerality and a hint of sweet roasted yams.
  • Palate: On the tongue, the ensemble is complex. The Madrecuixe provides a structural, earthy base, while the Bicuixe adds high-toned notes of tropical citrus and floral spice. The Espadín acts as the connective tissue, rounding out the sharper edges with a rich, velvety mid-palate of caramelized agave and roasted nuts. It is a perfectly balanced "symphony" where no single agave overpowers the others.
  • Finish: The finish is long, dry, and wonderfully aromatic. It leaves a lingering sensation of dry earth and resinous herbs, characteristic of the arid San Luis Amatlán region. A faint trail of sweet wood smoke and black pepper provides a sophisticated, lingering exit.

The Spirit of the Ensemble:

In Logoche, an "Ensemble" is not just a recipe; it is a snapshot of the hillsides. By processing different agaves together in the same oven and vat, Manuel captures the true "field profile" of the harvest, resulting in a depth of flavor that single-varietal distillates rarely achieve.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.

Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.

One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.

Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.

In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
