This exceptional ensemble is the work of Juan Vásquez Jiménez, one of the youngest and most talented producers in the NETA collective. Despite his youth, Juan displays a master’s touch, evidenced by the meticulous timing of this harvest.
In late September 2021, during the days surrounding the full moon, Juan harvested nearly two tons of agave. This batch is composed of 100% Capón plants: wild Bicuixe that sat for two years after being "castrated," and Espadín that sat for one. This extended resting period in the field, combined with the lunar influence on the plants' water content, has resulted in a concentrated, high-sugar profile, yielding only a limited run of 200 liters.
Tasting Notes
- Aroma: Deeply aromatic and sugar-forward. The "Capón" influence is immediate, offering scents of honeyed roasted agave, dried wildflowers, and a subtle salinity reminiscent of a coastal breeze.
- Palate: A masterclass in balance. Refreshing pops of melon skin and crisp orchard fruit (green apple and pear) provide a bright, juicy entry. This fruitiness seamlessly slides into a savory mid-palate of aromatic herbs and cooked maguey.
- Finish: The experience concludes with a bright, sweet finish that lingers. Just as the sweetness peaks, it is met with a burst of minerality—the signature "dry-stony" character of Miahuatlán soil—leaving the palate clean and vibrating.
The "Capón" Distinction
The use of 100% Capón agaves is a labor of patience. By leaving the Bicuixe in the ground for two additional years after it reached maturity, Juan allowed the plant to develop a "wilder," more savory profile, perfectly tempered by the lush, fruity sweetness of the one-year Capón Espadín.

What is the difference between Tequila & Mezcal?
