Neta Arroqueño & Sierra Negra Capón Ensamble | Nicolás García Vásquez

This is a truly special and collaborative expression, the Neta Arroqueño & Sierra Negra Capón Ensamble, distilled by Maestro Nicolás García Vásquez in Logoche, Miahuatlán. This spirit is a testament to the traditional socio-cultural and economic relationships between agave growers and distillers.

The two rare Agave americana varietals, Arroqueño and Sierra Negra, were carefully grown and capón-harvested, meaning their flowering stalk (quiote) was cut to retain all sugars and nutrients in the piña (heart). This process maximizes the agave's complexity and richness. They were harvested six months after their flowering stalks were cut in October 2022, when they were eight years old. Though grown in Ejutla on rocky white limestone soil, the growers returned the mature agave to Logoche for the craftsmanship of Nicolás and his family.

Distilled twice in copper pot stills in November 2022, this complex ensamble was meticulously composed from a careful mix of heads, hearts, and a high-proof cut of tails. This powerful, high-proof release clocks in at 52.3% ABV.

Tasting Notes: Arroqueño & Sierra Negra Capón Ensamble

  • Aroma: Immediately rich, savory, and deep. Dominated by earthy tones of black tea leaves, tilled soil, and slightly burnt caramelized onion. Lighter, brighter notes of sweet clover and dried apricot from the Arroqueño, with a gentle, smoky charred citrus peel note.
  • Flavor: The palate is huge and expansive, coating the mouth with a complex mix of sweet and savory. Core flavors of roasted sweet potato and pumpkin pie spice give way to a wave of herbaceous tarragon, eucalyptus, and dried oregano. The Capón status offers a rich intensity of dark leather and cacao nibs, highlighting concentrated sugars and complexity.
  • Mouthfeel: robust and textural, with a heavy, chewy oiliness. Despite the 52.3% ABV, the high proof is integrated and delivers a powerful, clean, sustained warmth. This richness is a direct result of the highly concentrated agave heart.
  • Finish: Exceptionally long and drying, leaving behind lingering notes of cigar box, mesquite wood smoke, and a lasting mineral-salt tanginess that compels another sip.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.

Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.

One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.

Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.

In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
