A Masterclass in Meunier and the Power of Green ClayMousse Fils is a grower-producer that has achieved cult status for one specific reason: their obsession with Pinot Meunier. While most Champagne houses treat Meunier as a supporting player, Cédric Moussé treats it like royalty.

"Les Terres d'Illite" is a vintage Blanc de Noirs named for the rare Illite (green clay) soils found in the village of Cuisles. This unique terroir acts as a natural water reservoir, allowing the vines to thrive even in dry years and imparting a distinct, chiseled minerality to the wine.

The 2020 Vintage: Solar Energy meets Soil Precision

The 2020 growing season was one of the warmest on record, producing fruit with incredible ripeness and concentration. Moussé balances this "solar" intensity with his signature Extra Brut dosage (only 2 g/L), ensuring the wine remains vibrant, structured, and transparent to its terroir.

Tasting Notes

  • Aroma: An expressive and layered nose. It opens with ripe stone fruits, apricot and yellow peach, intermingled with the classic Meunier "pastry" notes of toasted brioche, almond croissant, and honey. Subtle hints of red cherry and white flowers add elegance.
  • Palate: Texturally rich and "muscular," yet refined. The 2020 vintage provides a broad, creamy mouthfeel, highlighted by a fine, persistent mousse. You'll find flavors of baked apple, citrus curd, and a savory, almost umami depth.
  • Finish: Long, zesty, and intensely saline. The "Illite" clay expresses itself here through a chalky, mineral grip that cleanses the palate and leaves a lingering note of oyster shell and spice.
