The Craft

Every step of the process honors the wisdom of the past. The Maguey Alto (Agave Inaequidens) is harvested and cooked in shallow brick ovens to develop its deep flavor. The fermentation takes place in brick vats, which are uniquely enhanced by the addition of 6 liters of pulque. The spirit is then refined through a rare distillation process using a copper-topped, hollowed-out tree trunk, a method that imparts a singular character impossible to replicate with modern industrial equipment.
