MDM Pulquero: Lachiguizo, Miahuatlán
This remarkable Oaxacan agave spirit is a tribute to the massive Pulquero (Agave salmiana), a species more commonly used for pulque production than for distillation.
Crafted by the esteemed Maestra Reina Sánchez, this expression is a rare opportunity to taste a distilled version of this giant agave from the high-altitude terrain of Lachiguizo in the Miahuatlán district.
The Pulquero agave is famous for its enormous size and high water content, which makes it notoriously difficult to distill. Under the expert hand of Maestra Sánchez, one of the most respected female producers in Oaxaca, these challenges are transformed into a spirit of singular elegance and botanical complexity.
Tasting Notes
This Pulquero highlights the floral and vegetal spectrum of the Salmiana family.
- Aroma: An incredibly bright and "green" nose. It opens with intense notes of fresh-cut grass, green bell pepper, and a sweet, floral honey. There is an underlying scent of rain on hot stone and a faint, minty herbalism.
- Palate: The texture is light and silky. On the tongue, it delivers a unique combination of sweet cooked agave and savory botanical flavors like eucalyptus and cooked asparagus. It lacks the heavy fruitiness of other agaves, leaning instead into a crisp, vegetal profile.
- Finish: Refreshing and brief. It leaves a clean, peppery snap on the palate with a very soft, wispy smoke that doesn't overstay its welcome.
The Maestra's Legacy
Maestra Reina Sánchez is a central figure in the Miahuatlán distilling community. Her approach in Lachiguizo is defined by:
- Stone Pit Roasting: A delicate roast that ensures the floral notes of the Pulquero are not masked by heavy smoke.
- Tahona Milling: The agave is traditionally crushed to preserve the integrity of the fibers.
- Miahuatlán Style: Known for using refrescadera (cooling) techniques in distillation, which results in a higher proof spirit that remains incredibly smooth and approachable.
Why It Is Exceptional
Distilled Pulquero is rare because the plant's sugar concentration is lower than that of Espadín or Tobalá, requiring a massive amount of raw material for a very small yield. This bottle is a sophisticated choice for those who appreciate spirits with a "gin-like" botanical clarity and the refined touch of one of Oaxaca’s true master distillers.

What is the difference between Tequila & Mezcal?
Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.
Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.
One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.
Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.
In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
