MDM Chapero: Río Minas, Mixteca Alta
This rare agave spirit is a window into the rugged, high-altitude landscape of the Mixteca Alta region. Crafted from the Chapero agave (Agave Americana variant), this expression is brought to life by the expertise of Maestro Pantaleón López.
The Chapero agave is a relative of the massive Arroqueño, but it develops its own distinct personality in the thin air and mineral-heavy soils of Río Minas. These plants take over a decade to reach maturity, absorbing the essence of the Oaxacan highlands before being harvested for this limited production.
Tasting Notes
Distilled in the traditional style of the Mixteca, this Chapero offers a profile that balances deep roasted sweetness with a sharp, mountain-air clarity.
- Aroma: The nose is rich and inviting, led by caramelized agave and toasted cinnamon. As it sits in the glass, it reveals deeper layers of dried tobacco leaf, damp cedar, and a faint hint of citrus blossom.
- Palate: A dense and oily mouthfeel that coats the palate. It features a robust sweetness reminiscent of piloncillo (raw cane sugar) and baked tropical fruits, grounded by a savory, earthy backbone and a touch of wild herbs.
- Finish: Long and resonant. The finish provides a pleasant warmth with notes of cocoa powder and a persistent, stony minerality that reflects the high-elevation terroir of Río Minas.
The Maestro's Craft
Maestro Pantaleón López is a master of the traditional Mixteca distillation process. His work in Río Minas is characterized by a deep respect for the raw material:
- Underground Oven Roasting: The agave hearts are slow-roasted over local wood and stone, a process that ensures a well-integrated, soft smokiness.
- Hand-Mashed Fibers: By using traditional methods to break down the cooked agave, the ferment retains a complexity that mechanical shredders often lose.
- Small-Batch Distillation: Produced in limited quantities, each bottle reflects the specific environmental conditions of the harvest year and the Maestro's careful "cuts" during distillation.
Why It Is Unique
The Mixteca Alta is one of the most culturally rich yet least understood regions of Oaxacan spirit production. The Chapero agave is a bridge between the floral elegance of the $Americana$ family and the rustic, earthy intensity of the Oaxacan interior. This is a bottle for the connoisseur who wants to explore beyond the central valleys and experience the true diversity of the Mixteca.

What is the difference between Tequila & Mezcal?
Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.
Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.
One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.
Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.
In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
