Manuscrito High Proof Tequila (Chapter 2)

The Bold Statement: Amplified Agave and Intense Flavor

Manuscrito High Proof Tequila (Chapter 2) is the elevated, over-proof counterpart to the brand's flagship Blanco. Bottled at a powerful 51.55% ABV (103.1 Proof), this expression is designed for the discerning tequila lover who demands intensity, complexity, and a full-bodied agave experience.

Hand-crafted by Master Distiller Oscar Vazquez Camarena at El Sabino (NOM 1643) using traditional methods, this high-proof Blanco avoids the addition of water to preserve the purest, most concentrated essence of the single-estate, 100% Blue Weber agave from the Jalisco Highlands. The result is a bold, complex, and surprisingly balanced spirit that excels when sipped neat, yet has the structure to cut through and elevate any cocktail.

Tasting Notes

  • Aroma: A rich and powerful nose that immediately announces its high proof while remaining clean and inviting. Dominant notes of sweet cooked agave are interwoven with a "jubilee of peppers" including bell pepper and sharp white pepper. Herbal and vegetal complexity emerges with hints of celery, dill leaf, and a subtle earthiness and whisper of grape.
  • Palate: Rich, round, and creamy with a noticeable viscosity that counteracts the higher proof. The flavor profile is centered on cooked agave and bold black pepper, quickly followed by savory vegetal notes and a medley of baking spices (subtle cinnamon/wintergreen). Underlying notes of bright citrus zest (lemon/orange) and a touch of honey provide balance and complexity.
  • Finish: Exceptionally long, warm, and highly peppery. The finish begins with the full force of the bold vegetal and spicy notes, which slowly fade to a satisfying blend of soft peppery spice, earthy minerality, and a refreshing echo of citrus. The finish is clean and encourages another sip.

Origin: Jesus Maria, Los Altos de Jalisco

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.

Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.

One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.

Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.

In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
