Step into the world of wild agaves with this rare and powerful ensemble from Mama Chuy. Bottled at a robust 48.3% ABV, this agave spirit brings together three of the most coveted and difficult-to-tame wild agave varieties: Coyote, Tepeztate, and Jabali.

Because Jabali is notoriously difficult to ferment (often foaming over like a wild animal) and Tepeztate takes up to 25 years to mature, this blend is a triumph of traditional distillation. It is a spirit of extreme character, celebrating the mineral-rich soils and the untamed botanical diversity of the Mexican landscape.

Tasting Notes

  • Appearance: Crystal clear with high viscosity. The "perlas" (bubbles) are persistent, indicating the high quality and precise alcohol content of a traditional 100% agave spirit.
  • Aroma: The nose is an explosion of green and earth. High-toned floral notes of honeysuckle and wet slate (Tepeztate) dominate initially, followed by the musky, leathery depth of the Coyote agave. As it opens, a distinct bright citrus and tropical fruit sweetness (Jabali) emerges, balanced by a hint of woodsmoke.
  • Palate: An intense, multi-layered experience. The entry is surprisingly creamy, leading into a mid-palate of roasted green pepper, jalapeño skin, and damp earth. The Jabali component adds a unique balsamic and fermented fruit complexity, while the Coyote provides a grounding, mineral-driven backbone.
  • Finish: Long, spicy, and vibrating. It leaves a tingling sensation of black pepper, mint, and dry smoke, with a final fading note of sweet roasted agave hearts.

Serving Suggestion

This is a "meditation spirit." To honor the decades it took for these agaves to grow, serve in a wide-mouthed copita or a small clay bowl.

  • Neat: Sip slowly at room temperature.
  • Pairing: Complement the wild minerals with orange slices dusted with spicy worm salt or a piece of extra-dark Oaxacan chocolate.

Pro Tip:

Let it rest in your glass for 5–10 minutes before the first sip. The high ABV and wild agave oils need time to "open up" and reveal their full aromatic spectrum.
