Mal de Amor Ensamble: Cuishe & Tepeztate

This Artesanal Ensamble from Mal de Amor is a daring marriage of two of the most distinct wild agaves in Oaxaca. Produced in Santiago Matatlán by the Hernandez family, this expression brings together the tall, fibrous Cuishe (Agave karwinskii) and the ancient, slow-growing Tepeztate (Agave marmorata).

Because Tepeztate can take up to 25 years to reach maturity, its inclusion makes this mezcal a rare treat. When blended with the structural, mineral-heavy Cuishe, the result is a spirit that captures the rugged essence of the Oaxacan hillside. It is a bottle designed for the seasoned mezcal enthusiast who seeks deep, vegetal complexity.

Tasting Notes

  • Aroma: High-toned and incredibly floral. Initial notes of gardenia and green herbs are followed by a deep, damp earthiness and a hint of wet clay.
  • Palate: A powerful, "green" flavor profile. Expect intense notes of bell pepper, snap peas, and tropical fruit skin. The Tepeztate provides a spicy, peppery kick, while the Cuishe adds a dry, woody backbone reminiscent of cedar and pine.
  • Finish: Long, savory, and remarkably crisp. It ends with a sophisticated mineral tang and a touch of smoke that feels more like a campfire in the distance than an overwhelming char.

Technical Details

  • Agave: Ensamble of Cuishe and Tepeztate
  • Maestro Mezcalero: Armando Hernández
  • Origin: Santiago Matatlán, Oaxaca
  • Oven: Underground conical stone pit fueled by encino (oak)
  • Crushing: Traditional tahona (stone wheel)
  • Fermentation: Natural, ambient yeast in pine wood vats
  • Distillation: Double-distilled in copper alembic stills

Why It Works

The magic of this Ensamble lies in the contrast between its components. The Cuishe provides the "bones" of the spirit with its dry, structured profile, while the Tepeztate provides the "soul" with its volatile oils and intense, spicy-floral notes. It is best enjoyed neat at room temperature, allowing the complex aromatics to fully develop.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.

Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.

One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.

Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.

In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
