The Wild Heart of Chichicapam: Crafted by the Sánchez Brothers
This is the highly anticipated 2022 batch of the popular ensemble from the legendary Hermanos Sánchez Altamirano, CHUCHO Y PONCHO SÁNCHEZ, two of the finest distillers in San Baltazar Chichicapam. This special blend is composed of 60% Jabalí and 40% Espadín, two agaves that are harvested, cooked, milled, fermented, and distilled simultaneously to achieve perfect integration.
The Sánchez brothers represent the 4th generation of mezcaleros in their family, having honed their craft under the guidance of their late father, the famed Faustino Sánchez.3 This batch beautifully tames the notoriously complex and sometimes volatile Jabalí with the smooth, sweet base of Espadín, resulting in a truly special and unique mezcal that is a hallmark of their refined process.
Tasting Notes
This ensamble is celebrated for its complete flavor profile, offering a masterful harmony of the wild, floral Jabalí and the grounded, sweet Espadín.
- Aroma: A captivating interplay of high-toned floral notes (wildflowers, rose water) and the subtle green scent of fresh herbs (spearmint, fennel). The underlying aroma of roasted agave is balanced by a light smokiness and a hint of citrus zest.
- Palate: Full and expressive, offering a full spectrum of fruit, smoke, and spice flavors. The wild character of the Jabalí presents as green pepper, anise, and a savory earthiness, which is beautifully softened by the sweet vanilla and brown sugar notes of the Espadín.
- Mouthfeel: Clean and surprisingly light-bodied for its complexity, with a pleasant, smooth texture that makes it exceptionally sippable.
