From the rugged slopes of Guerrero comes an expression of A. cupreata that is as bold as the landscape itself. Crafted by the legendary father-son duo Ciro and Javier Barranca, this spirit is a masterclass in the "Papalote" profile, a species famous for its high sugar content and its ability to produce incredibly lush, fruit-driven spirits.
The Barrancas are renowned for their technical precision. In their fábrica, they favor a style that emphasizes the bright, tropical acidity of the agave. This isn't just a smoky spirit; it is a complex, multi-layered journey that showcases why the Guerrero highland terroir is some of the most sought-after in the world of agave.
The Artisanal Process
The Agave: Wild and semi-cultivated A. cupreata (Papalote), harvested at peak maturity from the mineral-rich hills of Ahuacuotzingo.
The Roast: Cooked for 3–5 days in an underground stone pit fueled by local holm oak, imparting a clean, savory smoke. The Fermentation: Fermented in open-air wooden vats (ayacahuite) for nearly a week, allowing local wild yeasts to develop the spirit's signature "funk" and fruitiness.
The Distillation: Twice-distilled in traditional copper pot stills, meticulously cut to ensure a heavy, oily body and a vibrant aromatic profile.
Tasting Notes
- Nose: An explosive and heady bouquet. Bright aromas of roasted pineapple and overripe banana are met with a savory touch of green olive, fresh-cut grass, and a hint of sweet floral honey.
- Palate: Rich, creamy, and incredibly dense. The palate is dominated by tropical fruit preserves and lime zest, balanced by a deeper, earthy core of roasted agave hearts, black pepper, and a subtle salinity that keeps it refreshing.
