Handcrafted off-grid at the solar-powered SolCraft Distillery in San Agustín Etla, Oaxaca, this ultra-premium, non-GMO distillate is a beautiful homage to Mexican biodiversity and heirloom farming. Maestro Destilador Jonathan Barbieri utilizes a thoughtful mashbill of 94% native Oaxacan landrace corn and 6% malted barley, capturing a Mesoamerican scientific legacy born over six millennia ago.
This unaged expression utilizes four ancient, non-GMO corn varietals directly sourced from local smallholding farmers: Chalqueño (grown at 9,000 feet in the high Sierra Mixteca), Tepecintle (from rain-forested tropical slopes), Olotillo (from the windy coastal plains), and the resilient Bolita. The grains are finely ground using an Austrian stone mill before mashing with 100% pure collected rainwater. Following a unique five-day sour-mash fermentation that incorporates traditional pulque, the liquid is slowly double-distilled in custom copper pot alembic stills and bottled non-chill-filtered at a robust 47% ABV. The result is a profoundly grain-forward spirit that bridges the world of whiskey with the complex terroir of Oaxaca.
