Hailing from the sun-drenched hills of Tepenene, Puebla, this expression is a masterclass in the rustic, high-altitude distilling traditions of the region. Master Mezcalero Abdias De La Luz Rodriguez, a former gardener who returned to his family’s palenque to preserve their liquid wisdom, crafts this spirit using methods that are as idiosyncratic as they are labor-intensive.
The Papalometl agave (Agave potatorum) is the wild "butterfly" of the desert, taking up to 15 years to reach maturity. Abdias ferments these wild hearts in raw bull hides, a rare ancestral practice that imparts a signature velvety texture and a complex, "barnyard" funk sought out by seasoned aficionados.
Tasting Notes
- Appearance: Luminous and clear with thick, oily pearls that settle slowly, reflecting the significant 49.4% ABV and natural agave resins.
- Aroma: The nose is nostalgic and deeply evocative. It opens with roasted green peppers, red brick, and old leather. As it breathes, more delicate notes of cucumber, fresh mint, and lime zest emerge, grounded by a savory "rawhide" musk and a hint of mesquite smoke.
- Palate: Exceptionally soft and viscous on the entry. The flavor profile is a sophisticated balance of dark tea, bitter greens, and cooked agave sweetness. The mid-palate reveals layers of walnut, almond, and a touch of vanilla bean, all wrapped in a rich, creamy mouthfeel provided by the hide fermentation.
- Finish: This is where the spirit truly shines. The finish is long and vibrant, moving from savory umami to a bright, peppery tingle of black pepper, wormwood, and ginger.
Why It’s Unique
Abdias uses a highly intentional "double fermentation" process where the agave is fermented whole in the hides before being smashed by hand with wooden mallets and returned for a second round. Combined with a still that utilizes a hollowed-out tree trunk as its neck, the resulting spirit is a wild, herbal, and deeply textured experience that tastes of the Oaxacan/Pueblan borderlands.
