Los Cantiles 1905: Palmilla Ensamble (Sotol & Agave Spirit)

Los Cantiles 1905 represents the liquid history of the Chihuahuan Desert. This rare Ensamble is a 50/50 marriage of wild-harvested Sotol (Dasylirion Wheeleri) and Lechuguilla (Agave Shrevei), two desert plants that define the rugged terroir of Northern Mexico.

Crafted by Maestro Jose Luis Portillo, this tiny 160-liter batch was distilled on April 14, 2023. Unlike mass-produced spirits, this is a "snapshot in time"—a singular expression of a specific harvest and a master’s touch. The Wheeleri provides the signature earthy, mineral backbone of Sotol, while the Lechuguilla adds a sharp, high-toned acidity and floral complexity.

Tasting Notes

  • Appearance: Crystal clear with high viscosity; slow, heavy "tears" on the glass indicating a rich mouthfeel.
  • Nose: Intensely atmospheric. It opens with charred cedar and damp earth, followed by a bright, wild streak of green peppercorn and lemon verbena. There is a faint, sweet smoke reminiscent of a desert campfire.
  • Palate: A powerful, textural journey. The entry is oily and savory, featuring roasted nuts and dried desert herbs. The Lechuguilla shines through the mid-palate with a crisp, lactic tang and notes of tropical fruit skin (guava/pineapple).
  • Finish: Exceptionally long and drying. It leaves a buzzing minerality on the tongue, slate, sea salt, and a touch of menthol, which calls for another sip. 

Pro Tip:

This spirit is best enjoyed neat at room temperature in a wide-mouthed glass or a traditional copita. The high proof and complexity allow it to open up beautifully with a single drop of water.

What is the difference between Tequila & Mezcal?
