The Carney is a rare, deeply traditional variation of Bacanora, often referred to as a "Pechuga"- style spirit. In this special 2024 release, Maestro Jose Luis Portillo utilizes a secondary distillation process where a selection of local ingredients and protein are suspended in the still. As the vapors rise, they pass through these elements, stripping their essential oils and flavors to create a spirit of incredible texture and savory complexity.
Distilled on March 7, 2024, this tiny 140-liter batch represents the pinnacle of Sonoran craftsmanship. At 50% ABV, it is a bold, high-proof celebration of heritage, offering a mouthfeel and aromatic profile that is vastly more rich and round than a standard Blanco.

Tasting Notes
- Appearance: Crystal clear with a dense, oily body. The "perlas" (bubbles) are persistent, indicating the high quality and 50% strength.
- Nose: A savory explosion. It leads with the signature smoky mesquite and roasted agave of Bacanora, but is quickly softened by notes of toasted nuts, savory broth, and dried fruits (raisins and apricots).
- Palate: Remarkable viscosity. The entry is creamy and rich, tasting of sweet almond and cooked agave, followed by a complex mid-palate of black pepper, cinnamon, and a distinct umami meatiness.
- Finish: Long, warm, and exceptionally smooth. It leaves a velvety coating on the tongue with lingering hints of savory spice and roasted cacao.
