Legendario Domingo Durango:

The Spirit of the Northern Desert

Legendario Domingo Durango is a bold departure from the valleys of Oaxaca, taking you into the high-altitude, rugged landscapes of Northern Mexico. Crafted from the wild Agave Durangensis (locally known as Cenizo), this mezcal is a tribute to the unique "Northern style", distinguished by its mineral complexity and evocative earthy notes.

Produced by Maestro Mezcalero Uriel Simental in the state of Durango, this expression captures the essence of an agave that thrives in a harsh, arid climate, resulting in a spirit of remarkable depth and character.

The Wild "Ash" Agave

The name Cenizo refers to the agave’s distinctive "ash-grey" color. This wild-harvested plant takes between 10 and 14 years to reach maturity, absorbing the minerals of the volcanic soil and the essence of the surrounding desert scrub.

  • Regional Terroir: Sourced from the highlands of Durango, where the extreme temperature shifts between day and night concentrate the sugars and develop a robust aromatic profile.
  • Artisanal Process: Roasted in traditional underground stone pits using local volcanic rock and oak wood, then fermented naturally in open-air wooden vats.
  • Distinct Distillation: While Oaxacan mezcals often use copper, many Durango traditions utilize unique still setups, including wood-topped stills, which contribute to the spirit’s signature mouthfeel.

Tasting Notes

Legendario Domingo Durango Cenizo is known for its "savory" elegance, trading heavy smoke for a sophisticated, multifaceted palate.

  • Aroma: A complex bouquet of dry earth, roasted nuts, and a hint of wildflower honey.
  • Palate: Rich and buttery. Initial notes of cooked agave and mesquite give way to savory hints of pine needles, dark chocolate, and a touch of leather.
  • Finish: Long, creamy, and distinctively mineral. It leaves a clean, slightly peppery warmth that speaks to its high-altitude origins.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.

Tequila and mezcal are both types of agave-based spirits that are popular in Mexico, but there are some key differences between the two. Tequila is made exclusively from the blue agave plant, which is primarily grown in the area surrounding the city of Tequila, about 40 miles northwest of Guadalajara. Mezcal, on the other hand, can be made from any type of agave plant, and is often made using traditional, labor-intensive methods.

One of the most noticeable differences between tequila and mezcal is their flavor. Tequila is typically smooth and subtle, with hints of fruit and spices, while mezcal has a more complex, smoky flavor that comes from the roasting of the agave hearts before they are fermented and distilled.

Another difference between the two spirits is their production process. Tequila is typically made using modern industrial methods, while mezcal is often produced using traditional techniques that have been passed down for generations. This can give mezcal a more authentic, artisanal character.

In general, tequila is considered to be a more refined and sophisticated spirit, while mezcal is often viewed as a more rustic and traditional drink. Both are popular in Mexico and are enjoyed around the world, so the best way to decide which one you like is to try them both and see which one suits your tastes.
