Sotol La Higuera Wheeleri is a testament to the artisanal traditions of Aldama, Chihuahua, crafted with passion by Master Sotolero Gerardo Ruelas. Utilizing time-honored methods, the Dasylirion wheeleri is cooked in an outdoor conical oven fueled by wood and rocks, imparting a balanced smoky character. The cooked plants are then meticulously milled by hand with axes. Fermentation occurs naturally with wild, ambient yeasts in large 1,000-liter pine vats, allowing the unique terroir to influence its distinctive profile. Finally, the sotol undergoes double distillation in copper alembic stills, resulting in a spirit of exceptional balance and depth.
