La Gritosa Reposado is a masterclass in restraint and tradition, crafted under the leadership of Melly Barajas and her dedicated all-female team. This spirit is a celebration of the Jalisco Highlands, using only mature agaves aged 9 to 10 years harvested from iron-rich red soil. By focusing on agaves at the peak of their sugar production and utilizing slow, atmospheric fermentation, La Gritona maintains a profile that honors the plant above the barrel.
The production process is intentionally low-intervention. The agave is steam-cooked in thick-walled earthen ovens for 24 hours, followed by a 24-hour rest before being crushed. After a double distillation in steel stills, the tequila rests for eight months in reused American whiskey barrels. These barrels are specifically selected for their exhausted oak character to ensure the wood never overpowers the bright, crisp essence of the Highland agave.
Tasting Notes
- Aroma: Freshly cooked agave takes center stage, accompanied by bright citrus zest and a hint of wet earth. There are very subtle undertones of vanilla and dried herbs, with almost no heavy oak influence.
- Palate: A clean, round mouthfeel that leads with savory agave sweetness. You’ll find notes of green apple, white pepper, and a touch of roasted pineapple. The wood influence is remarkably "stunted," offering just a whisper of cinnamon and light toasted nuttiness.
- Finish: Crisp and medium-length. It leaves the palate feeling refreshed, with a lingering herbaceous quality and a faint, buttery smoothness from its eight months in glass-rested barrels.

- Distiller: Melly Barajas (and an all-female distillery staff). Cooking: Traditional earthen stone ovens (Horno).
- Fermentation: 100% agave, natural open-air fermentation in steel vats. Aging: 8 months in "tired" American whiskey barrels to preserve agave forwardness.
- Sustainability: Agave remnants are repurposed as local cattle feed; bottles are hand-blown from recycled Mexican glass in nearby Zapopan.

What is the difference between Tequila & Mezcal?
