Fósforo Tobalá Artesanal Mezcal:

The "Crown Jewel" of the Highlands

Rare, creamy, and vibrantly complex. While the Ensamble offers a beautiful introduction, the Fósforo Tobalá is a deep dive into one of the world's most revered agaves. Known as the "Crown Jewel" of mezcals, the Tobalá agave (A. potatorum) is small, wild, and notoriously difficult to cultivate. Under the expert eye of Master Mezcalero Aarón Alva Sánchez, this 100% Tobalá expression captures the spirit's legendary reputation for elegance and intensity. 

This is a Joven (unaged) mezcal that drinks with the weight and richness usually reserved for aged spirits, offering a pure, unadulterated look at Puebla’s unique terroir. 

Tasting Notes

  • The Look: Crystal clear and brilliant, with heavy, slow-moving "legs" that signal its rich viscosity.
  • The Nose: A powerful and sophisticated bouquet. Expect aromas of honeyed sweetness and ripe tropical fruit (think mango and pineapple) intertwined with bell pepper, wet slate, and a faint, distant scent of a smoldering campfire.
  • The Palate: Deeply textural and "creamy." The initial burst of caramelized pineapple and cooked agave is balanced by an unexpected freshness—minty herbs and a touch of green apple.
  • The Finish: A long, evolving finale. It transitions from a fruity sweetness to a dry, stony minerality with just a whisper of smooth, refined smoke that lingers on the back of the palate. 

Why It’s Special

Unlike the more common Espadín, Tobalá agaves are tiny (often the size of a cabbage) and produce a fraction of the juice. Fósforo’s commitment to sustainable, estate-grown Tobalá in Puebla, rather than harvesting wild populations to the point of extinction, makes this not just a premium spirit but a responsible one.

  • The Purist: Drink it neat at room temperature from a veladora (traditional glass prayer candle holder) to experience the full spectrum of the agave.

What is the difference between Tequila & Mezcal?

Tequila is a type of mezcal, much like how scotch and bourbon are types of whiskey.
